Pesto pastry trees:
2 sheets puff pastry
1-2 Tbs pesto
Sprinkle of parmesan *optional

( this is per batch, so I make double to include both sun-dried tomato pesto and then basil pesto)

Chicken, Swiss and cranberry stuffed tortilla boats:
3 large tortilla- cut and baked to boat shapes
2 chooked and cooled chicken breast (rotisserie chicken)
5 slices Swiss cheese- chopped
1 cup baby spinach chopped
1 tsp dijon mustard
1/4 cup cranberry sauce/jelly
125g cream cheese
Salt and pepper

Melon and Ham (or Prosciutto)
1/2 fresh deseeded and peeled rockmelon
250g fresh leg/loin ham or prosciutto
Sprinkle of spinach leaves.
