Chorizo de Cebu has always been my favorite breakfast back home in the Philippines.
Since moving to the U.S., I’ve really missed that sweet, garlicky, slightly spicy flavor — the kind that brings you right back to mornings in Cebu.It’s hard to find the real thing here, so I started experimenting with my own recipe.I tried different combinations of spices until I got it just right — that familiar taste I grew up with.
When I fried it, and that sweet, sticky aroma filled my kitchen — I knew I was home again, even just for a moment.
This is my version of Chorizo de Cebu. Made from memory. Made with love."
This recipe can make up to 144 pcs chorizo balls
Ingredients:
6 lbs ground pork ( 50% fat and 50% lean) = 2.7 kilogram
1/4 cup minced garlic
1 + 3/4 cups sugar
4 tsp garlic powder
4 teaspoon paprika
4 teaspoon pepper flakes(optional)
2 teaspoon black pepper
1 tablespoon + 2 teaspoon salt
2 tablespoon cornstarch
1/4 cup soy sauce
1 cup water
hog casing for stuffing the meat
wash the hog casing very well inside and out before stuffing the meat
you can also make this as skinless longganisa
*no food coloring and no preservatives
can be stored in the freezer for up to 3-4 months
