🍲 Silk Squash Soup 🍲

Ingredients 🛒
3 cups water (750ml) 💧
2 cups gray squash, roughly chopped (300g) 🥒
1/2 block soft tofu, sliced (150-200g) 🧊
1 Tbsp white anchovy shrimp / salted shrimp (15g) 🦐 (Substitute: 1 Tbsp fish sauce)
1 Tbsp garlic, sliced (15g) 🧄
2 green onions, chopped (20g) 🧅
Optional: 1/2 Tbsp minced garlic (7g), salt to taste 🧂
👩🍳 Instructions
1️⃣ Boil water with sliced garlic, squash, and white shrimp anchovy.
2️⃣ Add tofu and green onions; simmer until squash is tender.
Notes 📝
The Squash: Rough-cut the gray squash into bite-sized pieces for the best "silk" texture.
The Secret: If you don't have white anchovy shrimp, fish sauce works, but the shrimp adds a cleaner depth.
Seasoning: Salted hrimp vary in saltiness; taste the broth at the end and add a pinch of salt only if needed.
