S'mores by the Fire- February Coffee of the Month for Nancy Drew's Mystery of the Seven Keys

Описание: Have you ever needed an excuse to eat a truly irresponsible number of marshmallows in a single day? We hadn't given it much thought before, but now we have a great one that will probably be used more often than we can really recommend.

S’mores by the Fire

½ cup Water
1/3 cup Sugar
½ cup Marshmallows
¼ tsp. Vanilla
1/8-1/4 tsp Cinnamon (optional)
1½ cups hot Coffee
2/3 oz Semi-sweet or Milk Chocolate
¼ cup+ Half & Half
3-4 large Marshmallows
Graham Crackers

Cover an oven safe pan with parchment paper and toast ½ cup of marshmallows under the broiler until just golden brown. In a small pot, combine the sugar and water and heat until the sugar is fully dissolved. Add the vanilla, cinnamon if desired, and toasted marshmallows and continue to cook over medium or medium-low heat until the marshmallows are also fully dissolved. Remove from heat and set aside. (You can store any extra syrup in the fridge. If your syrup ends up extremely thick after adding the marshmallows, you can also add a splash or two more of water before storing.)
Place the chocolate in a large mug and fill about ¾ of the way with your coffee. Let sit for a minute or two so the chocolate can start to melt, then stir well. Add 2 Tbsp of the marshmallow syrup, or a little over 1 Tbsp if using a smaller mug. Also add half & half to your desired amount and stir well. Broil several large marshmallows the same way as before and use them to garnish the top of your coffee. Sprinkle with graham cracker crumbs and enjoy with extra graham crackers on the side for dipping.
