Chocolate Éclair Cake (No-Bake)
Ingredients
2 (3.4 oz) boxes instant vanilla pudding mix
3 cups cold milk
1 (8 oz) container Cool Whip, thawed
1 box graham crackers
Homemade Chocolate Topping
1½ cups heavy cream
1½–2 cups dark chocolate chips
2–3 tablespoons milk chocolate frosting (store-bought)
Instructions
Make the filling
In a large bowl, whisk the vanilla pudding mix with cold milk until thick (about 2 minutes).
Fold in Cool Whip
Gently fold in the Cool Whip until smooth and fluffy.
Layer the cake
Line the bottom of a 9×13-inch dish with graham crackers.
Spread half of the pudding mixture over the crackers.
Add another layer of graham crackers.
Spread the remaining pudding mixture on top.
Finish with a final layer of graham crackers.
Make the homemade chocolate topping (microwave)
Pour the heavy cream into a microwave-safe bowl.
Microwave for 1–1½ minutes, until hot but not boiling.
Add the dark chocolate chips and let sit for 2–3 minutes.
Stir until smooth and glossy.
Stir in the milk chocolate frosting until fully combined.
Top the cake
Pour and spread the chocolate topping evenly over the graham crackers.
Chill
Cover and refrigerate for at least 4 hours, preferably overnight.
Serve & Enjoy
Cold, creamy, chocolatey, and ridiculously easy.
