Fried onions; simple yet delicious.
Onion is a commonly used vegetable in Chinese cooking; it can be stir fry, deep fry as in onion rings or use in soup making. Onions can be used as main ingredients by pairing with meat/poultry or seafood or as part of other ingredients.
In stir fry; onion has a crispy texture and sweet taste with aromatic fragrance. This makes it ideal as a side dish on the table. My recipe below cook the onion in a way that makes is crispy and sweet with a strong aroma. To cook this recipe it is important that no liquid it used; this would soften the onion and take away its aroma. The onion should be deep fried for about 5-10 second in hot oil before stir fry in high heat for around 1 minute. Using wine and soy sauce is the perfect way to enhance the onions natural flavour further. Making this a quick and tasty treat.
Half medium size onion
1 teaspoon dark soy sauce
1 teaspoon light soy sauce
1g MSG
1g sugar
Dash of wine
Peeled and sliced the onion into strips
Deep fry in hot oil for 10 seconds and drain; set aside.
Heat wok with some oil…quite hot!
Add the onion in and stir fry for a bit.
Add some dark and light soy sauce.
Stir fry for a bit and add MSG and sugar
Stir fry for some more.
A dash of wine or two and stir fry some more to complete.
