Two tasty salad recipes that are pure vegetarian, have lots of veggies in it and are a perfect crowd pleaser. Make it as a side dish with your meals or for lunch as a meal. They are filling and flavourful.
Urap Sayur- A delicious veg salad inspired by the Indonesian flavours made The Daily Delish way
A wholesome salad made with green beans and mung bean sprouts. Shredded coconut and peanuts add an excellent crunch to the salad.
Ingredients-Serves 3-4
Green beans- 300 grams
Mung bean sprouts- 100 grams
Peanuts- 1 cup
Shredded coconut- 2/3 cup
Red chillies- 2
Onion- 1
Garlic cloves- 5-6
Lime leaves- 2 (if you have do add them)
Cow ghee- 1 tbsp
Soy sauce- 1 tsp
Honey- 1 tbsp
Lemon juice- 1/2 if you are adding lime leaves, 1 if you don't have lime leaves
Method-
Blanch the beans and sprouts for 2-3 minutes. Drain the water and keep it aside.
Roast the peanuts and shredded coconut. If peanuts have skin remove them after roasting. Roast till golden and aromatic. Keep aside
Blend red chilli, onion, garlic and lime leaves ( if available) with a splash of water. Blend to a paste
Cook the paste in cow ghee for 3-4 minutes, add soy sauce, honey and cook for another minute.
Add in the roasted peanuts and coconut, lemon juice and mix everything well.
Toss in the topping with the blanched veggies and serve.
Note- I have not added salt in this salad, as soy sauce is already very salty and balances the flavours well.
Add salt to taste if you prefer it more salty.
Russian Salad- a creamy salad which has a mix of vegetables and fruits like pineapple. Pineapple adds a sweet and sour taste to the salad. Cream and mayonnaise makes it extra creamy and balances the flavours. This refreshing salad is a perfect party salad. Best served as a side dish.
Ingredients:
1.5 cups chopped and boiled veggies (carrots, French beans, peas and corn)
1 chopped cucumber
1 cup mixed bell peppers (red, green, yellow)
4 boiled and chopped potatoes
1/2 cup diced pineapple
1 cup chopped lettuce leaves
Salt and white pepper powder to taste
1/4 cup fresh cream
3 tbsp extra creamy eggless mayonnaise
8-10 crushed walnuts
Method:
Mix all the veggies in a bowl. Add walnuts, cream, mayonnaise, salt and pepper and mix everything very well so that the veggies are coated in the creamy salad dressing. Chill the salad for 1-2 hours before serving.
