**RECIPE: Quick Homemade Noodle & Potato Soup**
Ingredients:
1 onion (finely diced)
1 carrot (grated)
1 tbsp vegetable oil + small knob of butter (approx. 7-10g)
4 cups hot water
2 potatoes (diced into small cubes)
Salt (to taste)
Noodle Dough:
2 tbsp flour (plus more as needed)
1 egg
Pinch of salt
Garnish: Parsley, Green onions, Dollop of sour cream (optional).
Instructions:
1. Sauté onion and carrot in oil/butter for 1 minute until fragrant.
2. Add 4 cups of hot water and bring to a boil.
3. Add salt and diced potatoes; continue to simmer on low heat until potatoes soften.
