🥘 Ingredients:
For the dough:
1 cup all-purpose flour
½ tsp salt
⅓ cup warm water
1 tbsp olive oil
For the filling:
1 cup mashed potatoes (pre-cooked or leftover)
½ cup shredded cheddar cheese
¼ cup finely chopped onion
Salt & pepper, to taste
1 tsp butter (optional, for richness)
For cooking & serving:
2 tbsp butter or oil
Sour cream and chopped chives for garnish
🔥 Directions:
Make the dough: Mix flour, salt, warm water, and olive oil until a smooth dough forms. Roll into a thin circle on a floured surface.
Prepare the filling: Combine mashed potatoes, cheddar, onion, salt, pepper, and butter (if using).
Assemble pierogi: Cut dough into 3–4 inch circles. Spoon a teaspoon of filling onto each circle, fold in half, and press edges to seal.
Cook pierogi: Heat butter or oil in a skillet over medium heat. Pan-fry pierogi 2–3 minutes per side until golden brown and slightly crispy. Optional: Add ¼ cup water and cover for 2–3 minutes to steam for extra fluffiness.
Serve: Plate pierogi with a dollop of sour cream and a sprinkle of chopped chives.
