Ever wondered why the leg of lamb puts you off with a strong odour which is somewhat repulsive? It is because of the gland which is embedded in a little chunk of suet (fat) inside the lamb leg and when cooked with it, it gives a gamey taste to the meat. This gland which can be located in the shank end of the leg between the bottom round and the eye of the round. It is very important to remove it so you can enjoy the leg of lamb which is so delicious. It looks kind of greyish green when you cut open the chunk of fat as seen in the video above.
