Hello 大家好!今日Isaac同大家分享一個食過番尋味嘅香燜豬軟骨!軟骨可以輕鬆咬爛,有豐富嘅鈣質啊!用來跟飯、炒饭、跟湯粉麵,都係一絕啊!
Hello!Today, Isaac's sharing a very delicous dish named Brasied Pork Soft Bones. The pork soft bones can be easily eat the bones which are with much calcium. This dish can be with rice, noodles or even pasta. Enjoy it!
材料 Ingredients:
1. 2.5kg 豬軟骨 2.5kg Pork Soft Bones
2. 香料 Spice (八角 Star Anise、香葉 Myrcia、花椒 Sichuan Pepper 按口味添加桂皮和乾辣椒 some cinnamon and dry chilli if you like)
3. 调味料 Seasoner (鹽Salt、一羹蚝油 Oyster sauce、 柱侯酱 Chee Hau Sauce、生抽 Light soy sauce、老抽dark soy sauce、一兩粒冰糖 1 or 2 pieces of rock sugar)
4. 薑片 Ginger
Tips:
1. 用鹽來洗豬軟骨,可以洗走血水之餘又唔會失去肉的鮮味。
2. 期間加水一定要滾開水,這樣才能保持包內一直燜煮的狀態。
3. 焖的時間一定要2.5小时或者以上,這樣子才能讓軟骨容易入口、油脂都燜出來、肉都非常入味。
When add in water during the braising, use boiled water to keep it braising without stopping.
Use salt to wash the pork soft bones as salt can wash out the blood from the meat and the meats won't lose its delicate flavour.
The braising time must be more than 2.5 hours which will make the soft bones easy to eat, get fat out from the meat and make the meat tasty.
