Cinnamon Rolls 🤎
INGREDIENTS:
Tangzhong:
1/4 cup ap flour
1/2 cup milk
Dough:
Tangzhong
2 1/2 cup ap flour
1/4 cup sugar
1 tsp salt
2 tsp instant yeast (1 packet)
1/2 cup warm milk (~110°F)
1/4 melted butter
1 egg
Filling:
1/4 cup softened butter
6 tbsp brown sugar
2 tbsp sugar
2 tbsp cinnamon
1/2 tsp salt
Glaze:
4 tbsp softened cream cheese
2 tbsp sugar
4-6 tbsp warm milk
1/2 tsp vanilla
1/4 tsp salt
DIRECTIONS:
Cook tangzhong over low heat, whisk constantly until a thick, mashed potato-like consistency. Let cool until warm, not hot.
Mix tangzhong with all dough ingredients with a dough hook on the 2nd speed for 8-10 minutes, scraping halfway.
Cover and rise for about 100 minutes until doubled in size.
Lightly flour surface, add dough and roll into a rectangle, ~10x14 inches.
Evenly spread butter to all corners.
Mix the cinnamon filling in a separate bowl and sprinkle all over butter.
Roll up the dough, starting from the long side.
Cut into 8 pieces using floss and add to a buttered pan. Cover and rise for another 50 minutes until puffy and touching each other.
Bake at 350°F for 22-26 minutes.
For the glaze, cream the cream cheese and sugar first, then slowly add the milk and the rest of the ingredients.
