Have you ever wondered how a traditional workshop can produce 800 kilograms of candy in a single day? Some people think this is all done by hand, but it’s actually a highly synchronized mechanical process. You’ve probably seen these massive slabs of golden syrup being poured onto cooling tables, but the real work starts at the stretching station. This is called Honey Mandarin candy, and it has to be repeatedly folded by these heavy industrial arms to incorporate air. This aeration process is what transforms the dark, translucent syrup into a light, opaque, and crunchy texture. Once the color turns to gold, the batch is fed through a high-speed roller that perfectly shapes and slices the syrup into thousands of identical pieces.
