Millet Fante Kenkey
Utensil Used
3quart Church Pan
Also: some bowls, flat wooden laddle, leaves to wrap kenkey in.
Ingredients:
Millet
Salt (optional)
Millet Kenkey:
How to make Millet Dough:
Carefully pick out stones from millet
Wash and soak it overnight to soften
Send Softened millet to mill to grind
Mix ground millet with a bit of water to make the Dough (just like you'll do for corn dough)
Let it sit for three days to ferment
To Make Fante Kenkey
Untensil Used:
3 quart Church Pan
Preheat 3 quart while you make a light mix of millet with water (just like a banku mix)
Pour millet mix into pre-heated 3 quart and cover to cook at low heat for 5-8mins to thicken.
Meanwhile make another light mix of the millet in a bowl
Stir the thickened mix in the 3 quart till a smooth banku-like consistency is achieved.
Turn off fire and mix the thickened millet banku with the light Millet mix in a bowl to make your "aflata".
Pre-heat church Pan (3 quart with inset) with water
Tightly Fold in your “aflata” in your green leaf and place the in perforated basket
Cover to cook for about 10- 15mins.
Serve with Fante Fante
