Burhanpuri Dal Chawal | Shadiyon Walay Dal Chawal | Famous Dal Chawal Prepared in Burhanpur Weddings
Burhanpuri Dal:
1.5 Cup Toor Dal (Wash & Soak for 30 minutes)
Put in cooker alongwith 1 sliced onion, turmeric, salt & ginger garlic paste. Also add 2 TBS oil. Cook till it get tender.
Garam Masala:
1 TBS Fennel Seeds
1 TS Cumin Seeds
1 TBS Coriander Seeda
3/4 Cloves
1 TBS Whole Black Pepper
1 Star Anis
1 Black Cardamom
2 Green Cardamom
2 Cinnamon Sticks
Roast & grind all above spices.
4 TBS Desicated Coconut
8/10 Almond
Roast & grind with little water.
Put oil in pan and add 1 TS cumin seeds, bay leave, green cardamom & 1 sliced onion. Fry till brown, then add ginger garlic paste & 2 chopped tomatoes. Then add turmeric, kashmiri red chilli, red chilli powder, coriander powder & roasted cumin powder. Cook well for 5 minutes then add almond & coconut mixture. Cook for 5 minujtes then 1 TBS heaped grinded garam masala, mix it and add boiled dal. Mix well and add 1 glass of water. Then add 1 more TBS grinded garam masala which we prepared before. then add tamarind pulp, green chilli & coriander leaves.
Tadka:
Put oil in pan then add cumin seeds & dry red chilli. add pinch of red chilli powder and then add in dal.
Burhanpuri Rice:
1/2 Kg Rice (Wash & Soak)
8/10 Cashewnut
8/10 Almonds
Whole Garam Masala
Put oil in pan then add cumin seeds, bay leave, cloves, cinnamon sticks, green cardamom & whole black pepper. Fry for few seconds then add almond and cashewnut. Fry for few seconds then add 2.5 glass of water and then add soaked rice. Let it coo till water dries. Then at last add 1/4 cup of milk. Cook on low flame for 10 minutes.
