DUBAI VIRAL PARATHA BURGER
Ingredients for Paratha
Flour 4 cups sieved
Salt 1 tsp
Sugar 2 tbsp
Clarified butter 2 tbsp
Milk 1 ½ cup
METHOD
In a bowl add sieved flour, salt, sugar, ghee, mix well, add milk, continue to mix well, now if required knead with water to form into a smooth and soft dough. Knead the dough very well with your palms till your dough is very smooth, cover and leave it for half an hour.
Ingredients for Burger Patty
Chicken mince ½ kg without water
Ginger garlic 1 tbsp
Allspice ½ tsp
Roasted and crushed cumin ½ tsp
Chili powder 1 tsp
Crushed red pepper 1 tsp
Crushed coriander ½ tsp
Salt 1 tsp
Green chilies 3 chopped
Coriander leaves 3 tbsp
Butter or ghee 2 tbsp
Onion grated 2 remove water and add to the mince
METHOD
Mix all the ingredients very well and chopperise well, keep it for half an hour to marinate till you make lachha parathas. Now make small balls of the kneaded mince, use very little flour and roll the paratha very thin to a dinner plate size, now start cutting the paratha from the edge into thin fine strips till the whole paratha has been cut. Spread with melted ghee or oil about 2 tbsp and start rolling the paratha from one edge with your hands. Now put this cut dough strips in a lukewarm oil to dip for 2-3 mins, gently pick it up and stretch the dough, it shouldn’t break, now gently roll the strips into a round paida, keep doing this with all paidas, keep it for 10 mins. Grease your hands with oil, take chicken mince, form it into a patty on your hand, spread with cheese, fold from all sides so that cheese doesn’t leak out while frying, the patty should be thin and it should be size of the paratha. Now to fry the paratha, spread one dough on the surface, spread the paratha with your hands using little oil and they should be thick. Heat fry pan, spread with ghee or oil, spread lachha parathas, cover and leave it for 2 mins, then open and turn the parathas, spread little more oil and let it cook till light golden, remove the parathas. In the same pan, shallow fry the patties, 2 mins on each side then remove. Now cut your parathas with a sharp knife, cut into half from center, spread with chili garlic sauce on both sides, spread with coleslaw on one side, then juicy chicken patty, cover with lachha paratha. Paratha burger is ready to serve.
Ingredients for Coleslaw
Cabbage finely sliced 1 ½ cup
Mayonnaise ¾ cup
Black pepper ¼ tsp
Salt ¼ tsp
Sugar 1 tbsp
METHOD FOR COLESLAW
Mix all very well, keep it in fridge for half an hour.
CRISPY CHICKEN SANDWICH
Ingredients
Chicken breast 500 gm marinate with
Melted butter ½ cup
Garlic 1 tbsp
Thyme 1 tbsp
Parsley 1 tbsp
Lemon juice 1 tbsp
Mustard paste 1 tsp
Paprika 1 tsp
Worcestershire sauce 1 tbsp
Crushed red pepper 1 tbsp
Salt n pepper ½ tsp each
METHOD
Mix all the ingredients for 2 hours, then grill in 1 tbsp oil and 1 tbsp butter.
Ingredients for Sauce
Mayonnaise ½ cup
Sour cream ¼ cup
Oregano 1 tsp
Parsley 1 tsp
Basil 1 tsp
Garlic powder ¼ tsp
Onion powder ¼ tsp
Salt n pepper ¼ tsp each
Ingredients for Salad
Cucumber sliced 1 julienne
Cabbage 1 cup julienne
Jalapeno chopped 4 tbsp
Dill 1 tsp
Fresh parsley 1 tbsp
Crushed red pepper ½ tsp
Vinegar 1 tbsp
Mayonnaise 3 tbsp
Subway oregano bread
Salad leaves
METHOD
Mix all the ingredients for salad together.
TO ASSEMBLE
Cut the bread lengthwise into halves, heat in butter, spread with prepared sauce, then prepared salad, put grilled chicken and iceberg chopped, mozzarella cheese slices cut into halves, then grill the cheese in the oven till cheese melts, cover the top, fix with toothpick, cut in slants, serve with fries and rocket leaves.
