This basic tomato sauce is the workhorse of Italian cuisine, but don't stop at pasta, it's good over polenta, with eggs, on pizza, crostini, in soups, etc.
INGREDIENTS
3 quarts/2.8 liters canned whole plum tomatoes
1 heaping teaspoon sea salt
I bunch fresh basil leaves, torn
1 head garlic, cut horizontally
1 teaspoon red pepper flakes
1 1/4 cup extra virgin olive oil
DIRECTIONS
In a wide bottomed pan cook the tomatoes and salt over medium high heat until they begin to bubble violently. Reduce the heat to medium and cook down until they're reduced by half. This will take around 30 minutes. Stir occasionally chopping to help break up the tomatoes.
Meanwhile, add the rest of the ingredients in a small saucepan and heat over low heat until you hear the basil begin to crack, 15 - 20 minutes. Remove from the heat and let steep until your tomatoes are reduced down.
Strain the oil and add it to the tomato mixture. Cook over medium heat for 10 minutes, stirring well to ensure that the oil gets emulsified into the tomato mixture.
Makes 4 to 5 cups/ 1 liter of sauce. It freezes well.
