You don't need to spend thousands or even hundreds of dollars to put together a decent hiking kit. I am generalizing a lot because prices change, availability of equipment changes, and your needs may be different than mine.
Some Important things to keep in mind are not buying things you don't need, buying used or second hand wherever possible, and don't be afraid to improvise.
With outdoors equipment, money gets you lighter weight options. And that's about it. Even the $1000 bags tend to need replacing after just one or two seasons. Older gear that has already survived multiple owners or many years of regular use is probably going to have no problem with whatever you throw at it.
