Cook with me and check out how to make the most basic fried rice with egg at home with this no fail recipe. It's the basis of Chinese/Korean/Japanese style fried rice. It's super easy to make with only 3 basic ingredients. The best part is it can be made with any type of rice and the rice will turn out golden and fluffy, not mushy or soggy. It's quick easy fried rice recipe and most importantly delicious! It's perfect for a quick meal.
Fried rice in this video is Chinese style fried rice, which is flavored with Soy Sauce, Oyster Sauce, and Sesame Oil. Typically, the basic fried rice Korean style and Japanese style is also flavored with Soy Sauce, Oyster Sauce, and Sesame Oil. But you can flavor the fried rice in any way you wish, just use simple salt and pepper and that's also delicious.
=============== RECIPE: EGG FRIED RICE (Chinese style) ===============
INGREDIENTS: (1 person / 1 rice bowl)
» Rice - 1 bowl (warmed)
» Egg - 1 or 2 (per rice bowl)
» Scallion - handfull (chopped)
» Sesame Oil (or any other oil) - 1 tablespoon
» Soy Sauce - 1 tablespoon (optional)
» Oyster Sauce - 1 tablespoon (optional)
» Butter - 1 tablespoon (optional)
» Salt and Pepper to taste
DIRECTIONS:
1. CHOP the scallions into small pieces (separate the white and green part).
2. MIX the egg with bowl of warmed rice.
3. HEAT a pan over medium to high heat (or even low heat works).
4. ADD oil to pan to grease.
5. ADD the white scallions to pan and stir fry for a few seconds.
6. ADD the egg rice mixture to pan and stir fry for 3-5 minutes (depending on the amount of rice) or until the rice is golden fried rice.
7. ADD soy sauce from the edge of the pan, to give it a roasted flavor (optional).
8. ADD oyster sauce from the edge of the pan, to give it a deeper flavor (optional).
9. ADD the green scallions to pan and mix.

TIPS:
» The best part about this recipe is that it works with almost any rice. You can use short, medium, or long grain rice. You don't have to use leftover rice or cooled rice, as long as it's warm. You can use freshly cooked warm rice or microwaved leftover rice. Rice just needs to be warm, so it can absorb the egg when mixed.
» To make this perfect fried rice, which is not mushy or soggy, the secret is to mix the egg with rice before stir frying the rice. The egg will create a coating for the rice when stir fried. This will prevent the rice from becoming soggy or mushy.
» Add oil to the egg rice mixture (I did not know this at the time of video making, but I found that mixing oil into the egg rice mixture helps keep the fried rice fluffy and not too dry).
» Cut the scallions into small pieces and set it aside, the green part and white part separately. Add the fresh green part to the fried rice at the end to avoid it from getting soggy and mushy from over-cooking.
» When adding the sauce (soy sauce, oyster sauce), avoid adding it directly on the rice, but make space at the edge of the pan and add, to allow the aroma of the sauce to come out and also to avoid making the rice soggy.
