Moringa leaves Recipe| Healthy Vegetable Drumstick Leaves Sukka

Moringa leaves with jackfruit seeds – a simple, soulful stir fry that once graced the kitchens of our grandmothers, now nearly vanished from our dining tables.
Rich in nutrients, packed with flavor, and deeply rooted in local wisdom, this dish is more than just food – it's a memory, a story, a taste of home...

Moringa Leaves with Jackfruit Seeds Stir Fry
A rare and forgotten gem of Mangalore cuisine

Ingredients:
For the stir fry:
1 bunch Moringa leaves (Drumstick leaves) – separated from stems, washed, and drained
A handful of Jackfruit seeds (if available) – peeled, crushed, and washed
2 tbsp Coconut oil (or any cooking oil)
½ tsp Mustard seeds
5–6 cloves Garlic – crushed with skin
1 medium Onion – chopped
1 medium Tomato – chopped
Salt – to taste
½ cup Grated coconut
For the roasted masala powder:
¼ cup Boiled rice (uncooked, puffed during roasting)
1 tsp Coriander seeds
5–6 Dry red chilies

Preparation:
🔸 Step 1: Roast the Masala Powder
In a dry pan, roast ¼ cup boiled rice until it puffs slightly. Remove and let cool.

In the same pan, dry roast 1 tsp coriander seeds until fragrant. Add to the rice.

Next, dry roast 5–6 red chilies for a few seconds. Let all roasted ingredients cool.

Grind the roasted rice, coriander seeds, and red chilies into a fine powder. Set aside.

🔸 Step 2: Cook the Stir Fry

In a kadai, heat 2 tbsp coconut oil.

Add ½ tsp mustard seeds and let them splutter.

Add 5–6 crushed garlic cloves (with skin) and sauté briefly.

Add 1 chopped onion and fry for a few seconds.

Add 1 chopped tomato and a pinch of salt to help it cook faster. Sauté until the tomato softens.

Add the crushed jackfruit seeds and mix well.

Immediately add the cleaned moringa leaves. Stir on high heat – the leaves will release water and shrink in volume.

Once wilted, cover and cook on low to medium heat for 5 minutes.

Check the tenderness of the jackfruit seeds. If still hard, cover and cook a few more minutes.

Once done, lower the heat and add the prepared masala powder. Mix well.

Add ½ cup grated coconut and stir thoroughly to prevent sticking (due to roasted rice).

Cover and simmer for just 2–3 seconds to keep the mixture moist.
Serve this flavorful stir fry as a side dish with rice and curry. It's a perfect blend of rustic taste, health, and heritage.
