What’s another benefit of buying a knife with a wide profile, besides knuckle clearance and easier cutting of stacked food?
→ There’s plenty of steel on the blade, so removing even large chips will not change the shape of the knife.
We designed this Kouhei-Shinmatsu ZDP-189 Nakiri Silver 170mm (6.7") with an extra wide profile — 58mm (2.3")❗️ — so it’s extra forgiving if you chip it.
Still, it’s best to avoid chipping in the first place. Here’s how:
→ Use a knife for its intended purpose (for example, use a heavy cleaver to cut frozen foods or bones)
→ Avoid twisting the knife or applying excessive force.
→ Use a proper cutting board, like wood or specialized rubber (check out our cutting board collection!).
→ Keep the knife sharp (a dull knife is more prone to damage - and to damaging you!).
