Making the Orange Cardamom Butter for the Suzette French Toast

Recipe
1 whole orange peeled
1 lbs butter
1 cup sugar
1 cup water
2 tsp cardamom powder
Take off the peel of the orange, scrape of the pulp from the peel.
Blanch the peels in boiling water for about 3 minutes. Place in cold water
In a sauce pot, add sugar and water. Add peels and bring to a boil. Reduce heat to low and let cook until liquid reduces and starts to caramelize.
Strain the liquid from the peels but save some of the sugar syrup.
Let peels cool. Then chop finely and add to softened butter along with cardamom, and a tbsp of the sugar syrup. Mix well, then scoop or shape butter however you want (in a mold would be cute too)
Freeze or refrigerate until set.
