Let’s make chocolate mousse in my Parisian kitchen

Well... because I guess free will is alive and well and sometimes you just need a big bowl of mousse, right?! 😂 But honestly, chocolate mousse is my go-to dessert when guests come over. Simple, easy, and who could ever complain about chocolate? ✨
And even though this might be a big bowl of mousse to some, between Lev and me, it doesn’t last long 😅
🍫 Chocolate Mousse – makes enough mousse for 6 sensible people… or 2 people
200g dark chocolate
20g butter
4 eggs (In France, we use them raw — totally normal here. If that makes you nervous, just grab pasteurized yolks & whites!)
200g cream
75g sugar
Pinch of salt
1. Separate the eggs.
2. Whisk the egg whites with sugar and salt until stiff peaks form.
3. In another bowl, whip the cream to stiff peaks (careful not to overmix!), then fold in the yolks.
4. Melt the chocolate with butter. While still warm, fold into the cream mixture — don’t let it cool too much or it will seize and turn grainy.
5. Gently fold in the whipped egg whites.
7. Chill for at least 4 hours… if you can wait that long.
