#FlamBaé takes on this spicy little appetizer. It takes 5 minutes of your life, and uses mostly pantry ingredients!! I normally will make this easy & super simple appetizer using shishito peppers-- today I was brave and used serrano peppers! Equally good. 10x more spicy!! YUM!

RECIPE
1 egg yolk
3/4 cup olive oil or neutral flavored oil
1 1/2 tsp chili garlic crisps
1 tsp Sriracha sauce
1/2 tsp lime juice
1 tsp rice wine vinegar
1 tbsp grapeseed oil
3 cups of spicy (or not-spicy peppers)
1. Leave egg on countertop for 30 mins to temper-- no cold eggs here! Drop the egg-yolk into a medium-sized bowl (save egg white for tomorrow's breakfast). Whisk vigorously. Add only a drop or two of olive oil at a time. Never stop whisking. Keep adding olive oil. When you've added 50% of the olive oil you can stream it in more quickly, as long as you DO NOT STOP WHISKING till everything is incorporated. Go until you have a slightly stiff mayo.
2. Add chili garlic crisps, Sriracha, lime juice, rice wine vinegar to the mayo.
3. Heat a cast-iron pan on med/high heat. Drop in your grapeseed oil. When the oil is shimmering in the pan, you know it's hot enough! Pop in your spicy peppers-- make sure none of them are stacked on top of one another, and make sure there's one or two centimeters of space between peppers in the pan. All peppers should be making direct contact with the bottom of the pan, with enough steam to escape between them. Sear on one side till wrinkly and brown, maybe 2 minutes. Flip the peppers using tongs and sear for another minute or so. Shake that pan around so each side gets some love.
4. Plate!
