In today’s video, I take on the challenge of recreating a chef's masterpiece from Netflix's Culinary Class Wars—the Mala Cream Fried Dimsum, inspired by the remarkable Chef Jung Ji Sun. Recreating a dish like this and sourcing all the exact ingredients is no easy feat, but I’ve put my own twist on it to make it more accessible. While Chef Jung used lotus stem for a unique texture in her shrimp paste, I’ve substituted it with finely chopped mushrooms to achieve a similar texture and flavor.
This dimsum is all about the perfect crispy coating, made with delicate spring roll straps, and paired with a bold, creamy mala sauce. I’ve shared a simplified version, complete with tips, tricks, and shortcuts to help you bring this restaurant-worthy dish into your home kitchen.
