This mouth watering cabbage roll casserole has been a family favourite for years. Traditionally made with hamburger, we made the switch to a whole food plant based lifestyle and subbed out the "meat" for TVP (Textured Vegetable Protein). You can't even tell the difference as the flavours are all still there and this amazing, protein packed, vegan casserole will be a hit the whole family will enjoy! My kids would beg me to make this when they were growing up and it's so quick and easy to bring together in just one bowl. Budget friendly, vegan, WFPB, what more can you ask for?! Ingredients:
½ medium cabbage
1 onion
1 cup TVP
1 cup veggie broth, vegan beef broth(bouillon) or water
1 cup brown rice with 2 cups of water
1 can of tomatoes (diced or crushed 28 oz)
1 tsp cinnamon
1 tsp cumin
1 tsp garlic powder
2 tsp salt
1 tsp pepper
Instructions:
Preheat oven to 400 degrees fahrenheit
In a large mixing bowl add 1 cup of TVP with 1 cup of veggie broth, or vegan beef bouillon broth or water, just to rehydrate it.
Finely chop cabbage and dice onions
Place on top of the TVP that is soaking in the large mixing bowl. Do not stir just yet to allow TVP time to rehydrate.
Add 1 cup of rice with 2 cups of water to the mixing bowl
Add 1 can of tomatoes to the mixing bowl
Now it’s time to stir and mix well together
Add 1 tsp cinnamon, 1 tsp cumin, 1 tsp garlic powder, 2 tsp salt and 1 tsp of pepper and mix well
Oil the bottom of the casserole dish or spray with oil. Just a little bit and this is optional. You don’t have to use oil.
Place all ingredients from mixing bowl in a 9x11 baking dish, cover with tin foil and place in the oven
Set a timer for an hour and 1 hour and 45 min to check how it’s doing. Different ovens will vary. Your home will smell amazing at this point. After it’s been cooking for 1hr 45min, remove tin foil and allow it to cook for another 15-20 min to allow the top of the casserole to brown up just a bit.
Serve and enjoy! We always add a drizzle of olive oil on top of our serving and a little extra salt if needed.
