Suji Mini Cake Recipe | Easy Eggless Semolina Mini Cake
Suji Mini Cake is a soft, fluffy, and delicious eggless cake made with semolina (suji). It is very easy to prepare and perfect for tea time or as a quick homemade dessert. These cute mini cakes are made with simple ingredients and can be prepared without an oven as well.
In a bowl add suji, curd, sugar, milk, and oil. Mix everything well.
Cover and rest the mixture for 10–15 minutes so the suji absorbs the liquid.
Add baking powder, baking soda, vanilla essence, and a pinch of salt. Mix gently.
Add chopped nuts or raisins if you like.
Grease small moulds or cups with a little oil or butter.
Pour the batter into the moulds.
Bake in a preheated oven at 180°C for 15–20 minutes or cook in a covered pan on low flame until done.
Check with a toothpick; if it comes out clean, the mini cakes are ready.
