Peanut Chikki Recipe is a mungfali ki chikki. Moongphali Gud ki Chikki made by stirring crunchy roasted & skinned peanuts in a hot viscous jaggery solution. This sweet, nutty and crunchy Peanut Chikki Recipe (called Peanut Brittle in English and Gajak in Hindi). Beautifully caramelized, sweet, perfectly crisp, and crunchy peanut chikki or gajak is the most loved delicacy and a staple in Indian homes.

1 cup peanuts approx 200 gms
3/4 cup jaggery approx 300 gms
1 pinch soda bicarbonate / khane wala soda / meetha soda

1. Dry roast peanuts. Remove the skin.
2. Put jaggery in a kadhai with 2 tbsp water. Cook on low to medium flame.
3. Place a bowl with water near the gas for checking syrup.
4. Cook the syrup till it breaks with a snap. Switch off the flame.
5. Add peanuts and mix well. Spread on butter paper or greased plate or greased kitchen top.
6. Put cuts with a knife while hot.

Troubleshooting

1. If the syrup gets burnt
Break chikki and immerse in water. Heat and then wash with water to remove all the syrup. Dry the peanuts and remake the chikki with fresh syrup.

2. If chikki becomes too hard or soft
Break the chikki. In a kadhai add 1 tsp ghee and 1 tbsp water . Add the chikki and recook on medium flame till snap consistency. Spread and set the chikki.
