Ingredients:
Butter – 25 g
Sugar – 100 g
Baking soda – 7 g
Honey – 75 g (for a better aroma, choose buckwheat honey)
Eggs – 90 g
A pinch of salt
Flour – 250 g
Sour cream (at least 20%) – 300 g
Heavy cream (at least 30%) – 150 ml
Powdered sugar – 60 g
Preparation
Add honey, salt, sugar, eggs, and butter to a saucepan with a thick bottom.
Heat over low heat, stirring constantly, until the sugar and honey dissolve.
Add the baking soda.
As soon as the mixture starts to foam, remove the saucepan from the heat and add 50 g of flour.
Mix thoroughly and let the mixture cool to room temperature.
Sift in the remaining flour and knead until smooth.
Wrap the dough in plastic wrap and refrigerate for 2–3 hours.
Divide the dough into 3 parts and roll it out to about 2 mm thickness.
Cut out shapes of your choice (I use hearts).
Place them on parchment paper.
Bake in a preheated oven at 170°C (340°F) for 7–8 minutes, or until the dough turns a caramel color.
Let the cake layers cool.
Cream
While the cake layers are cooling, prepare the cream.
Whip the sour cream, heavy cream, and powdered sugar with a mixer for 2–3 minutes.
The cream should hold its shape well on the whisk.
Transfer it to a piping bag fitted with a round nozzle.
Pipe cream onto one half of a cake layer and cover with the second half.
Pipe cream on top as well.
Refrigerate the cakes for 4–5 hours, preferably overnight, to let them soak.
Decorate with berries.
