This Potato Soup is the ultimate comfort food, made in just one pot. It's loaded with savory flavors and creamy goodness, making it the perfect dish to enjoy on a cold, chilly day. Simply top it with crispy bacon bits, cheddar cheese, and green onions for a cozy and satisfying treat!
Ingredients:
For the soup:
1.5 lb. Potato (Yukon gold, white, or russet potatoes, peeled and chopped)
6 strips Bacon
1 medium Onion, chopped
4 cloves Garlic, minced
4 tbsp All-Purpose Flour
4 cups Chicken Broth
2 cups Milk
¾ cup Heavy Cream
1 tsp Black Pepper Powder
½ tsp Chili Powder
½ cup Sour Cream
3 tbsp Unsalted Butter
Salt, to taste
For garnishing:
Shredded Cheddar Cheese
Spring Onions
Bacon Bits
Recipe Notes:
1. Potato Size Matters: I have experienced adding very large chunks of potatoes typically takes a longer time to cook. So I recommend chopping the potato into small bite-size pieces to help them cook evenly and quickly.
2. Cooking Bacon: While cooking bacon, make sure you cook it until it becomes brown and crispy which helps to achieve a nice smoky and robust flavor in your soup.
3. About Bacon Size: You might noticed that I have roughly torn the cooked bacon, that's the way my kids like it in their soup, but you can also torn or even crush them into small pieces based on your preference.
4. Swap Bacon: You can also use ham or shredded chicken instead of bacon if it's not handy or you prefer other meats in your soup.
5. Spices: The seasoning I have added here will lend a slight heat to your soup without overpowering the base soup flavor. However, if you want more on high heat try adding cajun seasoning, creole seasoning, or a dash of cayenne pepper for the twist.
6. Blend the soup: Always make sure you bring the soup mixture to room temperature before blending them to avoid hot liquid splash accidents. I usually prefer using my immersion blender for convenience, but you can also use a potato masher or standing blender to puree the soup. Also if you are using a standing blender make sure you work in batches.
