The tangy, citrus flavour of the lemon is very prominent in this Lemon Cupcake recipe and it even smells fantastic. After baking, your kitchen will have the fresh fragrance of lemon throughout. In fact, I shared a few of these with my friends and the first thing they loved was the bright, lively aroma of the cupcakes. They smelled fantastic even the next day!
Normally, these Lemon Cupcakes last for a week at most, but in my household, they’re finished in a matter of hours! In fact, sometimes I eat 2 or 3 right after they’re baked since the taste is so fresh and delicious at that time. I also prefer a slightly warm cupcake without frosting so that’s the best time for me to enjoy these.
The most important step in this Lemon Cupcake recipe is to fill the cupcake liners till only 2/3 full. Make sure you don’t fill them all the way or they will overflow and not bake properly. Also, don’t fill them too little or they will not cook evenly. Another important step is to fold the final ingredients gently into the batter so the batter remains light and airy. No one likes a dense cupcake so it’s important to be gentle and ensure all the air bubbles remain intact.
For a more complex recipe, you can add frosting to the top of the Lemon Cupcake or even add a filling to the center. Really, this recipe is the base for a simple, delicious Lemon Cupcake but you can make additions to it as you please. Just be sure to not tamper with the ingredients and measurements to get the perfect Lemon Cupcake every time.

Lemon Cupcake Ingredients:
Lemon Zest - 1 lemon or 3 tsp
Lemon Juice - 1 lemon or 1/4 cup (55g)
White Sugar (Granulated) - 1/2 cup (100g)
Melted Butter (Unsalted) - 1/4 cup (60g)
1 Egg, at room temperature
Vanilla Essence - 1/2 tsp
All Purpose Flour - 3/4 cup (93g)
Baking Powder - 1/2 tsp
Baking Soda - 1/4 tsp
Salt - 1/4 tsp
Whole Milk - 1/4 cup (add more if batter is too thick)
