Inspired by Julia Child’s cookbook, I’ve made Boeuf Bourguignon! A classic French dish 🍽 I couldn’t find burgundy wine so I went with Madeira instead which turned out pretty nice👌

Ingredients:
Chuck Roast Beef 1-2lbs
Yellow Onion
Pearl onions
Garlic
Carrots
AP flour - 1 tbsp
Beef Stock - 3 cups
Madeira cooking wine - 3 cups
Bay leaves
Thyme
Tomato paste - 1 tbsp
Salt and pepper
Mushrooms
Instructions:
1. Cut your beef chuck into 1.5in x 1.5in pieces and dry them well
2. Sear them in a Dutch oven and remove
3. Leave all the fond in the pot (the dark brown residual) that’s all flavor!!
4. Add some oil and sweat out your onions and garlic
5. Add in carrots, the beef chuck and flour for thickening
6. Deglaze with beef stock and cooking wine. Remember to scrape the bottom and sides of the pan to get that fond out. Use a silicone or plastic tool to avoid scratching the pot.
7. Add thyme, bay leaves, salt, pepper and a squeeze of tomato paste.
8. Give it a mix and let it come to a boil
9. Simmer for 5-10 mins until the alcohol is cooked out
10. Optional: place a round parchment paper with the center cut out in the pot to keep the goods submerged.
11. Cover the pot and place in oven for 2 hours @ 350F (Julia Child’s recipe called for 2.5 hours for 325F) you do you.
12. Meanwhile, sauté mushrooms and pearl onions. I’m making it separate so that it doesn’t get all mushy in the braise.
13. After 2 hrs - Take the pot out, if your sauce is still runny… take the meat and carrots out. Reduce the sauce on the stovetop and strain.
14. Plate the beef, carrots, mushrooms, pearl onions and sauce.
15. Serve and enjoy! They taste great with potatoes or rice 😋 bon appetit!
