Ingredients
1 cup (233g) rice vinegar
1 ½ cup (346g) water
½ cup (112g) organic cane sugar
2 teaspoons (8g) salt
1 teaspoon turmeric
600g daikon radish (or 1 long daikon / Korean radish), peeled and cut into strips, rounds, or half-moons
Preparation (Short & Clear)
In a small pot, combine rice vinegar, water, sugar, salt, and turmeric. Bring to a boil, then turn off the heat.
Place the cut daikon in a glass container and pour the vinegar mixture over it. Let cool completely, cover, and refrigerate at least 24 hours before serving.
