Making Sweet & Spicy Venison Jerky

Today we're making Sweet and Spicy Venison Jerky following my favorite recipe for jerky that works just as well with deer meat or beef.
We start by slicing our venison about as thin as we can get it, then refridgerate the meat while we prepare the marinade.
For the marinade I like to use:
2 tsp. pepper (I like fresh and I like a mix, but regular black pepper is fine too)
1 tsp. crushed red pepper flakes
1/2 tsp. jalapeno flakes (DIY Jalapeno Flakes Video here - • Making Homemade Hot Pepper Flakes | DIY De... )
2 Tbsp. dry minced onion
1 tsp. liquid smoke (I'm using "Hickory" but any kind would probably be fine)
1 Tbsp. sweet liquid (I'm using Walden Farms sugar free "Maple Bacon Syrup" but anything like this such as honey, maple syrup, grape jelly, or even just straight sugar would work.)
1 Tbsp. worcestershire sauce
1/2 C. soy sauce
1/2 C. apple cider vinegar
We mix all these ingredients in a bowl and then pour our marinade into a large plastic bag on top of our thinly sliced venison. Masage the marinade well into the strips of meat. Now we'll refridgerate this for 6 - 24 hours (I prefer to give it a good long soak, pushing to that 24 hour mark). After which we place our drippy strips of deer meat onto our dehydrator trays. I always line my dehydrator trays with parchment paper circles which I cut myself from a regular roll of parchment. This makes cleanup super quick and simple and doesn't seem to slow down the dehydrating process much if at all. I crank the dehydrator as high as it'll go, which on my dehydrator is 160º F. and depending on how thinly we sliced our meat it'll be done in 4 - 8 hours. I like to check the meat after about 3 hours, this time it was almost done at that time so I quickly flip the slices of meat and rotate the trays and let it go for about 2 more hours. At this point the jerky bends and has that white stringy look to it which is our indicator that it's done. A final taste test confirms doneness and that our recipe turned out delicious! Our wild game snack is now complete and ready to be enjoyed on our next outing. Or, we could take it a step further, and turn it into delicious pemmican which could be the basis of the meal plan on our next overnight adventure! - (Hint - that video coming soon!).
