Sean's Symphony of Salad
What You're Gonna Need:
1 lb. Organic Spring Salad Mix
Cook's Choice of Vegetables (we used 1 bell pepper, 1 cucumber, 1 carrot, 1 stalk of celery and half a pint of mushrooms)
1 lb. Ground turkey
1/2 package of plant-based cheese
Seasoning Salt
Tajin seasoning
Hot Sauce
Olive Oil
Balsamic vinegar
Dijon mustard
What You're Gonna Do:
Brown ground turkey over medium heat in a large saucepan
Drain fat
Return to heat. Add 1 package of plant-based cheese
Cover
Let simmer until "cheese" is melted (5-7 mins)
While meat is browning
Chop your veggies into small bite-sized pieces
Rinse salad mix and put in a large bowl
Add veggies – toss
Add meat
Seasoning Salt to taste
Tajin to taste
Hot sauce to taste
Mix well
Doug's Quick & Easy Vinaigrette
The beauty of this dressing is that you can change it by using different-flavored balsamic vinegar, mustard, or herbs. The ratio of ingredients never changes. Ideally, one would emulsify the oil and vinegar by slowly pouring the oil into the vinegar in a steady stream while whisking.
What You're Gonna Need:
2 Tablespoons of Olive Oil
1 Tablespoon of Balsamic Vinegar
1 teaspoon of Dijon mustard
What You're Gonna Do:
Put ingredients in a small jar/container with a tightly fitted lid.
Replace lid and shake vigorously until well mixed
Drizzle over salad
Enjoy!
