Thai Green Curry with Chicken
INGREDIENTS
For the Base
3 x Canned Coconut Milk (13.5 oz) lite or whole fat or both
3-4 lbs Protein of choice (I used chicken breast)
2 x 4oz jars green curry paste
4-6 TBSP Fish Sauce (to taste)
1/4 C Sugar or Sweetener
Sriracha or Hot Thai Chili Sauce or hot dried pepper flakes
Veggies
1.5 C Frozen Peas
1.5 C Frozen Green Beans
1.5 C Carrots - Sliced lengthwise
2 large handfuls Power Greens (spinach, kale, chard)
1 stalk of Broccoli chop into florets
1 large Red Bell Pepper (chopped into longwise strips)
2 medium Green Bell Pepper (chopped into longwise strips)
1 Scallion (chopped and separated light from darker green section)
2-3 medium Zucchini (chopped into half circles)
DIRECTIONS
1. In a large pot, bring coconut milk to a simmer (DON'T LET IT BOIL) for 15 minutes
2. Add greens if using, add curry paste and stir in well
3. Add fish sauce and sugar
4. Add all vegetables minus broccoli and let simmer in pot without lid for 12-15 minutes
5. Add chicken, broccoli, let simmer on med heat for 6-10 minutes until chicken is cooked through
SERVING
Serve on top of rice or grain of choice!
