This video was filmed in September, right before the Mid-Autumn festival. Mid-Autumn festival is on 17/9 this year and definitely not on 7/11. 👀👉🏻👈🏻
I didn’t include the complete making process of the mooncakes, because or else the video is going to be an hour long (°ཀ°). But please let me know if you want to learn the whole recipe, I may make a video for it next year hehe.😜
Recipe
Ingredients:
Egg custard flavour (15 mooncakes)
[Lava filling]
11g sugar
7.5g milk powder
19g cream
19g coconut cream
22.5g melted unsalted butter
2 salted duck eggs (spray it with liquor and bake it at 180°C for 8-10 minutes, then pass it through a sieve)
[Custard filling]

30g custard powder
30g milk powder
10g coconut milk powder
50g condensed milk
100g coconut milk
10g cream
40g egg
50g sugar
40g unsalted butter
[Crust]
85g unsalted butter
40g powdered sugar
15g egg
15g coconut milk
180g cake flour
12g custard powder
6g coconut milk powder
Chocolate flavour (16 mooncakes)
[Lava filling]
30g cream
42g coconut cream
12g sugar
10g milk powder
25g dark chocolate
5g unsalted butter

3 eggs
60g sugar
40g cream
60g milk
30g cake flour
30g corn flour
15g cocoa powder
20g unsalted butter
[Crust]
20g powdered sugar
100g unsalted butter
20 g condensed milk
25g egg
145g cake flour
10g cocoa powder
10g corn flour

Black sesame flavour (12 mooncakes)
[Lava filling]
30g cream
42g coconut cream
12g sugar

5g black sesame paste
5g unsalted butter
[Custard filling]
2 eggs
30g sugar
40g milk
35g cream
10g milk powder

40g cake flour
20g black sesame paste

[Crust]
80g unsalted butter

40g powdered sugar
20g egg
33g bread flour
95g cake flour
20g corn flour

Pistachio flavour (12 mooncakes)
[Lava filling]
5g milk powder
15g coconut cream
15g cream
15g milk
15g unsalted butter
10g sugar
12g pistachio paste
[Custard filling]
70g egg
40g sugar
30g cream
7g pistachio paste
25g coconut cream
15g corn flour
15g cake flour
10g milk powder
15g unsalted butter
[Crust]
8g pistachio paste
80g unsalted butter
40g powdered sugar
20g egg
15g milk powder
95g cake flour
33g bread flour
20g corn flour
Instructions:
[Lava filling]
1. Mix all the ingredients together and pass it through a sieve (for the egg custard flavour)/ heat gently over low heat until all the ingredients are melted, then pass it through a sieve (for the chocolate, black sesame and pistachio flavour)
2. Pipe the mixture into silicone moulds , each filling should weigh about 5g
3. Freeze it overnight
[Custard filling]
1. Combine all the ingredients except the butter in a bowl and pass it through a sieve to get rid of any lumps
2. Pour the mixture into a nonstick frying pan
3. Add the butter ,heat it on low heat and stir continuously until it forms a dough
4. Let it cool and cover it with a cling wrap
5. Refrigerate it overnight
[Crust]
1. Let the butter soften at room temperature
2. Cream the butter and sugar until smooth
3. Add in the pistachio paste/ black sesame paste (for the pistachio or black sesame mooncakes only)
4. Add in the wet ingredients (eggs, coconut milk, condensed milk are all considered as wet ingredients)
5. Sift in the dry ingredients and gently fold it.
6. Refrigerate it for 30 minutes before using it
[Assemble]
As shown in the video :)))
Bake it at 200°C for around 10 minutes
DON’T OVERBAKE IT !!!!!!
