240 grams soft wheat, milled
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
2 tsp cinnamon
1.5 cups oats
1.5 cups raisins
2 sticks butter, melted
1/2 cup sugar
1 cup brown sugar
1 egg
3 tsp vanilla
Whisk the flour, salt, baking soda, baking powder, and cinnamon in a medium bowl. Add the oats and raisins and stir. In a large bowl, whisk the butter and sugars together. Add the egg and vanilla and whisk well until soft and fluffy (about 1 minute). Dump in the dry ingredients and mix well with a wooden spoon. With a small cookie scoop, scoop dough onto a small sheet or large plate and freeze for at least 30 minutes before baking or transferring to a freezer bag. Bake at 350 for 10 minutes. Let cool for at least 10 minutes and then enjoy! (If you are baking 2 sheets at a time, switch racks halfway through baking for even cooking.)
