Another yummy recipe to use all that zucchini up from the garden! Zucchini bread jam. They'll never know they're eating zucchini. It’s a great jam to have on the pantry shelf for baking, appetizers or as a gift. ;)
4 cups finely shredded zucchini
1 c apple juice unsweetened
1 pouch (3 ounces) powdered pectin
1/3 c raisins
1 Tb bottled lemon juice
1 tsp ground cinnamon
1/2 tsp group nutmeg
3 c sugar
