PREPARATION
*Note that the bag of whole wheat flour contains about 18 cups of flour in it. Plan your use of the flour recipes so you can make pizza and pasta all week! The breakfast donuts only have to be made once to have about 2 to 3 each morning with some black coffee from your pantry.
RECIPES
PASTA NOODLES
Makes four 1-serving lunches or dinners.
4 cups whole wheat flour
4 T oil
1.5 cups water
Mix ingredients and knead into dough.
Roll out into desired thickness and slice into desired pasta shapes using a bench scraper or knife.
Boil pasta in water until it rises to the top, generally takes just a few minutes.
Drain pasta. Serve with tomato, spinach, and pantry toppings as shown in video.

PIZZA & ZEPPOLE DOUGH
Makes 16 donuts, one thin 16-inch pizza crust, and one thin 9-inch pizza crust. Once you make the donuts, you can repeat this full recipe to instead make two thicker pizza crusts for other pizzas repeatedly during the week.
4.5 cups whole wheat flour
4.5 t fast rise yeast
1.5 t salt
2 cups water 120 to 130 degrees
1/4 cup oil
Mix dry ingredients in large bowl.
Add water to dough and then oil. Mix.
Knead dough. Let rise in a warm spot for 20 minutes.
Split dough into two portions. Reserve half for donuts and half for pizza.

SWEET RICOTTA FILLED DONUTS (ZEPPOLE):
Retrieve half of finished "Pizza & zeppole dough".
Filling:
Mix 1/2 of a 15 ounce container of whole milk ricotta cheese and 1/4 cup powdered sugar together. Set aside.
Slice the dough portion into 16 pieces.
Flatten each piece into a disc with your fingers.
Add a small spoonful of the sweet filling to the center of each disc.
Pinch dough together in a half-circle shape.
Deep fry in oil that has reached 350 degrees. Fry for 3 minutes, turning over once.
Donuts will be hard when you first retrieve them out of the oil but will soften after about 10 minutes.
Drain on paper towels.
Toss powdered sugar on both sides of donuts and let cool.
OVEN BAKED PIZZA
Roll and flatten dough portion out into one 16-inch crust and one 9-inch crust.
Rub oil onto pizza pans and place flattened dough on them.
Place desired toppings from grocery haul onto pizza. Add any pantry toppings as desired. Use a thin layer of mozzarella. 1/2 of ricotta cheese container is also available for a pizza cheese base once donuts are made.
Bake at 425 degrees for 13 to 15 minutes. If you make your dough thicker you will require more baking time.
