Butter chicken lasagna
Recipe (serves 4-5):
750g chicken thigh or breast, small dices
MARINADE:
1 tbsp cumin powder
1 tsp salt or to taste
6 tbsp olive oil
1 tbsp ginger and garlic paste or frozen cube
SAUCE:
400g chopped tinned tomatoes, puréed
1 1/2 white or red onions, finely chopped
3-5 birds eye chillies, finely chopped or made into a paste
5 tbsp vegetable oil
1/2 tbsp turmeric powder
1 1/2 tsp salt or to taste
1 tbsp coriander powder
40g butter
150-200ml water
1 tbsp dried fenugreek leaves
2 tbsp fresh chopped coriander
3/4 tbsp garam masala
500ml double cream
250g carrots, diced or chopped, par-boiled
90g mange-tout, chopped, par-boiled
500g cheddar and mozzarella cheese grated
4 slices gouda cheese, optional
Note:
•oven temperature to cook chicken 170 degrees celsius and to cook lasagna 180 degrees celsius
•use a large oven dish for lasagna
•the lasagna takes 35-40 minutes to cook in the oven
•once the chicken is cooked in the oven, drain most of the water and use 1/4 for the sauce
