Filipino Egg Pie – Classic Creamy Custard Pie with Caramelized Top
Ingredients
Pie Crust
1 ½ cup (180) all-purpose flour
1 tbsp. granulated sugar
¼ tsp. salt
7 tbsp. (100g) cold unsalted butter
4 tbsp. cold water
Egg Mixture
4 eggs
1 tsp. vanilla extract
1 can (396ml) condensed milk
1 can (354ml) evaporated milk
Procedure
1. Mix flour, sugar, salt and butter until crumbly then add cold water.
2. Form dough into a ball, wrap with cling film and refrigerate for atleast an hour.
3. Flatten the dough into 1/4 to 1/8 inch thickness with a rolling pin and place into a 9-inch pie pan. Trim the excess and crimp the edges. Poke multiple holes using fork to prevent bubbling.
4. Mix 3 eggs + 1 egg yolk, vanilla extract, evaporated milk and condensed milk.
5. Strain the mixture twice.
6. Whisk 1 egg white until stiff peak.
7. Fold egg white to the mixture.
8. Pour the egg mixture to the prepared pie crust.
9. Bake for 350F for 50-55 minutes or until surface turned brown and center is slightly jiggly.
10. Let it cool completely. Serve cold if desired.
