The easiest Chicken Curry made with simple ingredients along with a simple recipe. No marination, no slow cooking, this recipe is apt for all who are in a rush to complete their dinner preparations.
As the name says, Chicken Banjara, where Banjara means Gypsies or Wanderers or Nomads who cook as they travel from one place to another to their new destination. Hence this is the dish that is made in a jiffy with the simplest ingredients.
You will simply love this delicious Chicken Banjara that is super simple to make. It’s a delicate combination of onions, ginger and garlic cooked along with spices and curd which make this dish absolutely delectable. Serve it along with jeera rice or roti for a delicious weekend lunch or dinner.
Note : Mustard Oil is the best oil for cooking. But it has a pungent smell. The simple way is heating the wok or the pan you will use for cooking, add the required amount of mustard oil and let it heat till it releases smoke, once the oil starts emitting smoke, turn off the heat. Let the oil cool down and then start the usual cooking.
This process will definitely remove the smell from oil
Ingredients for Chicken Banjara
:
750 gms Chicken
3 tbsp Mustard Oil
2 Bay Leaf (Tej Patta)
4 to 5 Black Peppercorns (crushed)
4 nos. Cloves (Laung)
4 nos. Cardamoms (Elaichi)
2 sticks Cinnamon (Dalchini)
1 no. Star Anise
2 large ( 220 gms) Onions (thinly sliced)
2 inch Ginger (finely chopped)
10 cloves Garlic (finely chopped)
½ tsp Turmeric Powder
2 tbsp Kashmiri Red Chilli Powder
1 ½ tbsp Coriander Powder
4 nos. Dry Red Chilli
½ cup Curd (Dahi/Yogurt)
½ tsp Salt (or as per taste)
150 ml Water (or as per the consistency you require)
½ tsp Coriander Seeds (dhania), roasted & crushed
4 to 5 sprigs Coriander Leaves (Dhania Leaves) finely chopped
Note : tsp is teaspoon
tbsp is tablespoon
