Hey Beautiful Souls! ❤️ I had to try the viral croissant loaf bread recipe! 🥐👀 The anticipation was killing me as I waited for it to rise and bake to perfection! ⏰ When it finally came out of the oven, the aroma that filled my kitchen was incredible! 🏠❤️ It turned out amazingly flaky and delicious - honestly, better than the bakery! 🍞👌 Definitely a recipe worth trying if you’re a bread lover like me!
Ingredients:
For the dough:
280g all purpose flour
33g sugar
5g salt
30g soft unsalted butter
4g dry instant yeast
15g eggs (beat 1 egg in a small bowl and measure 15g of it)
145g milk
For the roll-in butter:
125g cold unsalted butter, flattened into a sheet.
Instructions:
1. In a large mixing bowl, combine bread flour, sugar, salt, and instant yeast.
2. Add softened butter, egg, and milk. Mix until a shaggy dough forms.
3. Knead the dough for 10-12 minutes until it becomes smooth and elastic.
4. Form the dough into a ball and place it in a lightly oiled bowl, covered with plastic wrap. Refrigerate overnight (at least 8 hours or up to 12 hours).
Laminate the Dough:
1. On a lightly floured surface, roll out the chilled dough into a rectangle approximately 1/4-inch thick.
2. First Double Fold: Spread the flattened butter evenly over the center 2/3 of the dough, leaving equal sides of the dough, uncovered on either side.
3. Fold the unbuttered sides over the buttered center, like a letter. Rotate the dough 90 degrees.
4. Roll out the dough into a rectangle again.
5. Second Double Fold: Fold the unbuttered sides over the center, like a letter.
6. Single Fold: Next fold the dough in half lengthwise, like a letter.
Shape the Croissant Loaf:
1. Roll the laminated dough into a rectangle with sides 24x18 cm
2. Divide the dough into 8 equal pieces, by cutting the dough into rectangle strips, like in the video.
3. Very lightly spray water on top of the strips, to make them slightly moist. Place each cut dough strips sideways as in the video, and press them together sideways until they stick together.
4. Flatten the dough using a rolling pin and roll the dough as shown in the video. Place the shaped loaf in the prepared baking pan (9L x 5W x4.5H inches).
5. Cover the pan with plastic wrap and let the croissants proof in a warm place for about 1-2 hours, or until they have doubled in size.
6. Preheat the oven to 375°F (190°C).
7. Bake the croissant loaf for 22-25 minutes, or until golden brown.
8. Remove the croissant loaf from the oven and let it cool in the pan for 5 minutes.
9. Transfer the loaf to a wire rack to cool completely.
Coconut Sambal - Two ways!
Traditionally, sambal is coarsely pounded using a mortar and pestle or a hand grinder. However, for convenience, you can also use modern appliances like a blender or food processor to achieve the desired consistency.
Fresh grated Coconut Sambal Recipe:
Ingredients:
1 cup grated coconut
4-5 shallots, (finely chopped or pounded)
1-2 teaspoons chilli powder (adjust to taste)
Salt, to taste
1 tablespoon lemon juice
A few curry leaves, chopped (about 1 tablespoon)
Instructions:
1. Shred a fresh coconut using a coconut grater or a food processor. This Sambal is made with freshly grated coconut, as it adds a little sweetness which takes the Sambal to the next level.
If fresh coconut isn't available, you can use dried, desiccated, or frozen coconut as a great alternative.
2. In a blender or food processor, combine the grated coconut, chopped shallots, chilli powder, salt, and curry leaves. Blend until the mixture is well combined into a coarse mixture. Do not grind it into a paste.
3. Add the lemon juice to the blender and pulse a few times until the sambal is well mixed.
Roasted Coconut Sambal Recipe:
Ingredients:
1/2 cup roasted coconut (coarsely grated or shredded or roughly chopped)
4-5 cloves of garlic with skin
1-2 teaspoons chili powder (adjust to taste)
Salt, to taste
Instructions:
1. Roast the coconut in a pan over low heat, stirring frequently, until the coconut is lightly toasted. Let it cool.
2. In a blender or food processor, combine the roasted coconut, garlic cloves with skin , chili powder, and salt. Blend until the mixture is well combined and slightly coarse.
3. Transfer the roasted coconut sambal to a serving bowl and enjoy with your favorite dishes!
Coconut sambal is best consumed fresh, but it can be stored in an airtight container in the refrigerator for up to a day.
