Today let’s learn how to make Bread from Chef Milind. With one dough we are gonna make Challah and Zopf breads. So tune in 😁

📝 INGREDIENTS:
All Purpose Flour - 250 g
Instant Yeast - 5 g
Salt - 5 g
Sugar - 12.5 g
Oil/Butter - 20 g
Milk - 12.5 ml
Water - 125 ml
Egg - 1 No.
For Egg Wash:
Add one egg in 15 ml of milk and mix it well. Brush it lightly to get that brown colour when you bake it.

What is Gluten?
There are two proteins called Glutenin and Gliadin present in wheat. These proteins when moistened and worked forms a protein network called Gluten. This Gluten is responsible for the volume, texture and appearance of baked goods. It provides the structure and enables the dough to retain the gases given out by the leavening agents. Leavening agent in breads is Yeast. Other Leavening agents in baking are baking powder, baking soda and also eggs.
What is Windscreen Test or WindowPane Test?
Windscreen Test is performed to check if the dough is kneaded well or not.
How to perform Windscreen Test?
Take a piece of dough and gently start stretching as shown in the video. It shouldn’t tear n it should appear to be translucent (just like a window where you can see the light on the other side).
👉🏼 SUGGESTIONS:
Use good quality ingredients.
All the ingredients should be at room temp.
Don’t add all the water in one shot. You might need less or more water than the prescribed measurement depending on the climatic conditions around you and also depends on your body temp. too. So always add little water at a time.
I suggest you’ll to use caster sugar instead of granulated sugar. If you don’t have caster sugar then it’s fine you can use granulated sugar.
Don’t tear the dough. Always use a bench scraper to divide the dough.
Don’t brush too much of egg wash as it drips of and settles at the bottom n tends to burn. We brushed too much actually. 🙈
