How to Cook Bananas in Coconut Milk At Home

Normally Thai bananas are used but you can use just regular bananas. The bananas in coconut milk is a dessert that I looked forward to whenever my family had parties. I never understood why they didn't make bananas in coconut milk any other time.

This Thai dessert, bananas in coconut milk, is served warm. If you have left overs, you can turn the dessert into ice cream. Imagine have a gluten-free, dairy-free ice cream.

It takes about 15 minutes to make and only needs four simple ingredients. Make it anytime of the day, even in the morning for breakfast. Dessert for breakfast? Why not?

Ingredients:

3 cups coconut milk or 2 cans of coconut milk
2 large bananas or 10 ripe Nam Way variety bananas (Thai bananas)
1 cup sugar
1 tsp salt

Directions:

1. Peel the bananas and cut into quarters.
2. Pour one can (or 1 1/2 cups) of the coconut milk into a pan and bring to a boil.
3. Add 1 cup sugar. stir until dissolved.
4. Add the second can of milk or 1 1/2 cups of the coconut milk. Stir to mix well.
5. Add the bananas and cook over medium heat until tender. '
6. Add a pinch of salt, or not.

Serves 4-6

Note: If the bananas are very ripe, reduce the amount of sugar used. If the bananas are not fully ripe, you can par boil the bananas in plain water. Remove them from the water and proceed with the above recipe.
