There are days when the simplest things stir the imagination—a bowl of leftover kosambari, cool with moong dal and sweet grated carrot, quietly waiting in the fridge. I remembered a voice in my head saying, “Nothing wasted, everything transformed.” And so, with a bit of this and a pinch of that, crisp, spiced vadas emerged from my kitchen—unexpected, delightful.
To that kosambari, I stirred in a few generous spoonfuls of chickpea flour and about a tablespoon of rice flour to help with crispness. A pinch of asafoetida for your gut health, a touch of turmeric for warmth, chilli powder for a gentle hum, and salt to taste. The batter should be thick and sticky—ready to be pinched into shape by hand or dropped in with a spoon. Into hot oil they go, frying until golden and crisp. Perfect with a cup of chai, or alongside rasam and rice, these vadas bring comfort, crunch, and a quiet sense of joy.
