Tempe is a very traditional Indonesian Staple foods, it’s commonly very easy to find in Indonesia, but how about if you live abroad.
Yes , in USA maybe you can find Tempe in some supermarkets but the Tempe is far from the Indonesian originals Tempe ( the flavor, texture, & it’s quite awful taste to be honest) , sadly most of the Tempe are Produced by Mexican company...
Where is Indonesian Tempe manufacturing???
So Because all above reason I have been making my own Indonesian Tempe for about 15 years now, it’s start from trial , failure and a lot learning too, and finally come into perfection.
It’s quite simple too if you live in hot weather country, probably the fermentation just need 1 day , unfortunately I live in cold weather country, sometimes even in spring is quite cold too. The requirement for better fermentation in Tempe is about 65 F - 80 F , below and above that temperature you will have a lot challenges to do it, also the humidity of the room is a key too.
So usually I make the Tempe during the summer season, it takes 2/3 days fermentation, and Tempe can be froze up to 6 months.
