It's a great time of year for easy slow cooker dinners! This week I put together one of my easy crockpot recipes in the newest addition to my slow cooker lineup.

SLOW COOKER PIRATE STEW
3/4c sliced onion
1lb ground beef
1/4c long grain rice, uncooked
3c diced raw potatoes
1c diced celery
2c sliced carrots (optional)
2c canned kidney beans
1 tsp salt
1/8 tsp pepper
1/4 tsp chili powder
1/4 tsp Worcestershire sauce
1c tomato sauce
1/2c water

1. Brown onions and ground beef in skillet. Drain.
2. Layer ingredients in slow cooker in order given.
3. Cover. Cook on low for 6 hours, or until potatoes and rice are cooked.


CORN CAKE MUFFINS
1 pkg Jiffy corn muffin mix
1 pkg Jiffy golden yellow cake mix
2 eggs
1/3c milk
1/2c water

Preheat oven to 350 degrees F. Grease muffin pan or use paper liners. Combine all ingredients until blended. Fill muffin cups 2/3 full. Bake 15 - 20 minutes until lightly browned. Makes 20 to 24 muffins.
