Recipe -
Ingredients:
1. Clarified Butter / Ghee - 2 tbsp
2. Cumin Seeds / Jeera - 1/2 tsp
3. Bay leaf / Tej patta - 1
4. Cinnamon / Dalchini - 1/2 Stick
5. Star Anise / Chakra Phool - 1
6. Black Peppercorns / Kali Mirch - 3 to 4
7. Black Cardamom / Badi Elaichi - 1
8. Onion / Pyaz - 1 Sliced
9. Ginger / Adrak - 1 Inch grated
10. Green Chilli / Hari Mirchi - 2 to 3 Slited
11. Tomato / Tamatar - 1 Sliced
12. Cauliflower / Fulgobhi - 1 Cup
13. Carrot / Gajar - 1 Long pieces
14. French Beans / Beans - 1 Cup chopped
15. Green Peas / Hare Matar - 1/2 Cup
16. Capsicum / Shimla Mirch - 1 Cup diced
17. Salt - As per taste
18. Red Chilli Powder / Lal Mirch Powder - 1 tsp
19. Turmeric Powder / Haldi Powder - 1/2 tsp
20. Coriander Powder / Dhaniya Powder - 1 tsp
21. Biryani Masala - 1 tsp
22. Mint Leaves / Pudina - A few
23. Basmati Rice - 1 Cup
24. Water - As required
25. Fried Onion / Fried Pyaz - 1 Cup
26. Saffron Milk / Kesar Milk - 2 to 3 tbsp
27. Coriander Leaves / Hara Dhaniya - A handful + For garnishing
FOR PREPARING RAITA :
1. Curd / Dahi - 1 Cup whisked
2. Cucumber / Kheera - 1 Grated
3. Mint Leaves / Pudina - A few chopped
4. Pomegranate / Anar - 1 to 2 tbsp
5. Salt - As per taste
6. Roasted Cumin Seeds Powder / Jeera Powder - 1/2 tsp
7. Red Chilli Powder / Lal Mirch Powder - 1/4 tsp
Instructions:
1. Soak washed basmati rice in the water for 15 to 20 minutes. Then strain them. Keep it aside.
2. Heat ghee in a pressure cooker. Add cumin seeds, bay leaf, cinnamon stick, star anise, black peppercorns, black cardamom, and onion. Mix well.
3. Then add ginger and green chilli. Mix well. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
4. Now add tomato and mix well. Add cauliflower, carrot, french beans, green peas, and capsicum. Mix well.
5. Saute it for 1 to 2 minutes on medium flame. Keep stirring occasionally.
6. Then add salt, red chilli powder, turmeric powder, coriander powder, and biryani masala. Mix well.
7. Further, add mint leaves then keep the flame low and add soaked rice and level it.
8. Add fried onion and mint leaves on it. Then add saffron milk and 2 tbsp of ghee.
9. Then add 1 & 1/2 Cup of water. Then cover the cooker with its lid. Cook it on high flame till 2 whistles.
10. Once done, turn off the flame and let it cool down completely.
11. Then open it and add coriander leaves. Take it out on a serving plate using a spatula.
FOR PREPARING RAITA :
1. Take curd in a mixing bowl. Add cucumber, mint leaves, pomegranate, salt, roasted cumin seeds powder, and red chilli powder. Mix well.
2. 'Veg Biryani in Pressure Cooker | One-Pot Meal' is ready to be served.
